Can I tell you how much I love summer foods. Tomorrow we are having guests for dinner so started the prep for some of the dishes this evening.

Tomorrows menu will consist of:

  • Cheese, crackers, olives and wine for appetizers
  • Fresh Gazpacho as the first course (recipe below)
  • fish with a parmesan  panko crust
  • steamed veggies
  • freshly baked honey bread with herb butter
  • green salad
  • then 7up cake with fresh berries and iced herb tea

My favorite Gazpacho recipe

  • 1lb ripe tomatoes
  • 1 small red onion
  • assorted sweet peppers
  • 1 clove garlic, crushed
  • 1/2 med cucumber
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 14 oz hot & spicy V8 juice
  • few dashes of hot sauce
  • 1-2 tbsps lime juice
  • Salt & pepper to taste

Skin and remove the seeds from the tomatoes. Chop the onion and peppers and place in a food processor with the tomatoes, garlic, cucumber, vinegar, oil and V8 juice. Puree until semi-smooth. Add the lime juice and hot sauce and seasoning to taste. Chill for at least four hours. Enjoy.
